THE SPACE

It is a multi-functional space for simulating different restaurant environments and studying and observing consumer behaviour.

ACTIVITIES

In the experimental restaurant, factors influencing consumer perception and emotional responses are studied. Food (be it a dish or menu) comprises numerous variables that can be studied in order to optimise the catering offer in detail. In the experimental restaurant, thanks to the collaboration of experts from various disciplines, ranging from neuroscience to systemic design, and proxemics to consumer psychology, and, through the support of a system of cameras, the influence of variables such as the presence/absence of sounds and noises, the type of lighting, the presence of aromas and colours, the furnishings and the service methods can be assessed.
